I’m a cocktail girl, a passionate dog mum, and an American who’s called Australia home for over 25 years.
Some would say I’m a serial Entrepreneur,
I just call it my inability to sit still. I love building something from scratch,
giving it a red-hot go, and, yep, failing spectacularly from time to time.
I absolutely love love, and I genuinely believe I have the best job in the world.
After a night with Flossy, my cheeks usually hurt from all the smiling.
I’m obsessed with people, joy, and great service. It’s in my DNA. Oh, and I definitely travel for the food and cocktails.

How Would You Describe Your Business In One Sentence?

Where Did the Idea for Flossy Come From?
Before launching Flossy, I spent 15 years in the events industry and owned a dessert business with three locations, over six years
So when it came time to plan my own wedding,
I knew exactly what was missing! An interactive experience with a little magic and a few surprises along the way.
Our food was fun and engaging, but there was nothing that blended desserts and cocktails.
“My two great loves! so I created Flossy out of pure necessity, designing the kind of experience I would’ve wanted at my own wedding.
Why Did You Choose Byron Bay as Your Base?
Byron was home for 15 years when I started Flossy, and honestly, there’s nowhere else quite like it. It’s creative,
laid-back, and filled with people who love a good time (and a good drink).
I’ve since moved just down the road to Lennox Head, but Byron’s energy will always be part of Flossy’s DNA.
What Makes Flossy Stand Out from a Regular Mobile Bar?
The first thing you’ll notice is the cart itself. My husband and I designed and built
the Flossy Cart to enhance a venue, not just sit there like another functional, flat-pack bar.
Then comes the magic: your guests get to watch hand-spun fairy floss made right in front of them. It’s interactive,
nostalgic, and an instant conversation starter, especially for those guests who haven’t met yet.
“Now, imagine being handed your favourite cocktail topped with perfectly paired floss,
a Lychee Martini with lychee lime floss, or an Espresso Martini crowned with crème brûlée floss. It’s indulgent, surprising, and just joy in a glass.”
But the real difference? The service. Having your drink served by someone who’s genuinely having the best time,

and everything in between, Flossy is there to bring the magic and the bubbles.
How’s the Journey Been as an Entrepreneur?
The entrepreneurial journey is a wild ride full of adrenaline,
failure, and the kind of risks that don’t always pay off. It demands resilience,
adaptability, and a slightly unhinged level of optimism.
“But here’s the thing, the magic happens when you’ve been knocked down a hundred times and still get back up.
For me, Flossy was that moment. It made every failed business, every setback, and every late-night stress spiral completely worth it”
I went from hating what I did to absolutely loving it, something most people never get to experience.
I genuinely cherish being part of people’s happiest moments. Some mornings,
I wake up jealous of my own life because what I’ve built brings people joy.
What’s Your favorite Cocktail (and Does it Pair with Fairy Floss)?
At Flossy, everything gets the floss treatment because life’s too short for plain drinks.
Crowd favorites include a margarita topped with salted lime floss,
and an espresso martini crowned with crème brûlée floss.

What’s Been Your Favorite Event or Standout Moment So Far?
Choosing a favorite event feels a bit like picking a favorite child.
Whether it’s a couple saying “I do,” a business owner finally launching their dream,
or a family celebrating a new baby, every moment is monumental.
Each event reminds me how meaningful these celebrations are.
I feel incredibly honored to be part of them, and yes, I’m that person who cries during strangers’ vows.

How Do People Usually React When They First See Flossy In Action?
When people first see Flossy, it’s always a mix of surprise and pure delight. I constantly hear things like,
“Oh my god, this is so fun!” or “I’ve never seen anything like this before!”
Watching guests eat the floss, sip the cocktail, and then dissolve the floss into their drink for an extra hit of sweetness :)
always sparks laughter. And after that first sip? The reactions are everything!

Absolutely! Flossy hits the road for all the best celebrations.
We travel to the Sunshine Coast, Toowoomba, Gold Coast, Brisbane,
Byron Bay. And Yamba, and occasionally make special appearances in the Hunter Valley and Sydney.
Wherever there’s good energy and a reason to celebrate, Flossy will be there.
If Flossy Were a Guest at the Party, What Kind of Guest Would She Be?
I’ve never been asked this before, but I love it!
Flossy would be that guest you instantly click with, the one radiating warmth, flashing the biggest smile,
and somehow making sure everyone’s having an amazing time.
She’s intuitive, fun, and always a step ahead, knowing what you need before you even ask.
She’s the life of the party, the name everyone remembers when describing the night.
She truly loves love, and she celebrates others with her whole heart.
How Do You Keep That Magic Alive With Every Event?
“I’m the kind of person who wakes up happy,
and on event days, I wake up even happier. I genuinely love what I do, and that energy just flows naturally.”
Keeping the magic alive isn’t something I have to chase. It’s already there. Every event is filled with love, laughter,
and moments worth celebrating. I’m simply adding a little sparkle to what already exists.
My biggest motivation is seeing the joy in others. It fuels me.

My biggest motivation in life is helping others,
and Flossy has proven that it’s absolutely possible to love what you do while making money at the same time.
“Growth for me looks like adding more staff and carts, scaling in a way that stays true to the brand’s magic.
I’ve received so many inquiries from people around Australia and even overseas who want to start their own version of Flossy.
My goal is to find the right individuals in key locations where I know they’ll thrive.”
“I often have to turn down events because they’re too far away,
which is exactly why I’d love to see Flossy business owners pop up across Australia and eventually in America too.”
